Scrumptious Strawberry Shortcake

What little girl didn’t love Strawberry Shortcake cartoons growing up? The freckles on her big cheeks, her bright red hair, and her delicious smelling products. Every time I see her picture, I crave some homemade strawberry shortcake.

Now that spring is here, there is fresh fruit everywhere, which makes for the perfect ingredients for a light, summery dessert. I’ve never actually made this from scratch before this post (I usually use Bisquick mix) but the batter is quite easy to make. Passover ends tonight so I am looking forward to digging into this as soon as the sun goes down! Strawberry shortcake is definitely my favorite spring and summer dessert. Hope you enjoy! Strawberry Shortcake

3 pints (6 cups) fresh strawberries
½ cup white sugar
2 ¼ cups all-purpose flower
4 teaspoons baking powder
2 tablespoons white sugar
¼ teaspoon salt
1/3 cup shortening
1 beaten egg
2/3 cup milk
Whipped heavy cream (I like to use the heavy whipping cream from the cartoon that you beat yourself, but feel free to use whatever you like)

Slice the strawberries and toss them with ½ cup sugar. Set aside

Fresh Strawberries!

Preheat oven to 425 degrees
Grease and flour cake pan (recipe calls for 8-inch round pan, but I used the same pan I bake brownies in)

In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and ¼ teaspoon salt. With two forks (or a pastry blender if you have one), cut in the shortening until the mixture resembles coarse crumbs literally take the forks and just cut the shortening into the flour).

Make a well in the center and add the beaten egg and milk. Stir until just combined.

Spread the batter into the prepared pan. Bake for 15-20 minutes, or until golden brown. Let cool partially in pan.

Slice partially cooled cake in half, making two layers. Place half the strawberries on one later, and put the other layer on top of the strawberries. Top with remaining strawberries and cover with whipped cream.

This recipe was definitely roommate approved :)
